Day 6: French Chicken and the Best Sauce Ever

On cooking for someone you love and discovering that sometimes the best parts of a meal are the things you didn't plan.

I was supposed to post this yesterday, but I was exhausted and fell asleep very quickly as soon as I got home. But yesterday’s kitchen adventure started with a request from my boyfriend.

He wanted something with chicken and potatoes, and naturally, I responded with, “Okay! Leave it up to me.”

Now, those might not sound like particularly famous last words, but whenever I say something like that, I immediately have to figure out what I'm actually going to make.

So, off I went to search for chicken and potato recipes.

I scrolled through a few options before finding one called French Chicken and Potato. It sounded delicious, and I decided to give it a go. I had no idea that the real star of the entire dish would end up being the sauce.

Oh. My. Goodness.

That sauce.

I genuinely think I could have eaten it by the spoonful. Actually, my boyfriend practically did! He kept spooning it out of the dish, which I think is a pretty good indication that it was a success.

The sauce was rich, full of flavour, and soaked beautifully into the potatoes and carrots roasting alongside the chicken. Everything came together so nicely, and I already know that this is a recipe I'll be keeping tucked away for another day.

You know when you try something new and immediately think, I need to make this again? That was me with this sauce.

I might need to make a little collection of recipes that earn that kind of reaction. You know, the ones you keep coming back to because they're just too good to forget.

A small chicken-related mishap

Of course, not everything went perfectly.

My boyfriend was helping me check the chicken's internal temperature with his meat thermometer. We checked it and thought we were good to go at 75°C. We were feeling pretty confident that everything was ready.

Then we sat down to eat.

The chicken was… tough.

Oops.

It wasn't exactly the melt-in-your-mouth chicken I had imagined serving. I suppose this is part of learning to cook: sometimes you follow the steps, check the temperature, and still end up with something that isn't quite how you pictured it.

Chicken can reach a safe internal temperature and still turn out dry or tough, depending on the cut, how long it's cooked, and how it's prepared. So, while we had the temperature covered, there was still a little room for improvement! Probably instead of using chicken breast, I could’ve used chicken thighs!

Thankfully, the sauce was doing a lot of the heavy lifting. And honestly, with those potatoes and carrots soaking up all that flavour, the meal was still a winner.

I'll just have to work on getting the chicken as good as the sauce next time.

An unexpected rice salad

While the chicken was cooking, I decided to make something to go alongside it.

I cooked some white rice and started chopping vegetables into tiny pieces: cucumber, spinach and red capsicum. I also grated some carrot and mixed everything through the rice with a squeeze of lemon juice and a drizzle of olive oil.

Nothing particularly complicated. No elaborate recipe or long list of ingredients. Just a few fresh vegetables, some rice, and a little seasoning.

And it was so good!

The freshness of the cucumber, the sweetness of the carrot, the crunch of the capsicum and the lemon juice worked beautifully together. It was simple, colourful, and a lovely contrast to the rich sauce from the chicken.

But the best part was eating it all together.

A spoonful of rice salad, a roasted potato, some of the carrots from the roasting dish, and that incredible sauce. It was one of those combinations where everything on the plate seemed to work together.

I had started the evening looking for a chicken and potato recipe, and somehow ended up with a meal that included a new favourite sauce and a rice salad I hadn't even planned on making.

Not horrible for a night when I had simply said, “Leave it up to me.”

The joy of making something for someone else

I think one of my favourite things about cooking is that it gives you a way to care for people in a very practical, everyday way.

You don't necessarily need a special occasion. You don't need a restaurant reservation or an elaborate dinner planned weeks in advance. Sometimes, it's simply asking someone what they'd like to eat, heading into the kitchen, and doing your best to make something they'll enjoy.

Of course, there will be mistakes. The chicken might turn out tougher than expected. You might substitute an ingredient because the shop doesn't have what you need. A recipe might take longer than you thought, or something might not look quite as beautiful as the photo you saw online.

But there is something lovely about the process itself: learning, experimenting, adjusting, and sharing the result with someone you care about.

And when someone is happily spooning the sauce out of the dish, I think you can forgive yourself for a slightly overcooked piece of chicken.

I'm still learning my way around the kitchen, and I have plenty more recipes I want to try. Some will turn out beautifully, others might need a second attempt, and I'm sure there will be plenty more little kitchen stories along the way.

That's part of the fun.

For now, though, I'm keeping that French chicken sauce recipe somewhere safe. Because if there's one thing I learned today, it's that a really good sauce deserves to be made more than once.

Until tomorrow,

Chatty 🤍
